Chewy Fruit Cake

Ingredients
170g Butter
225g Soft brown sugarChewy Fruit Cake
225g Mixed dried fruit
60g Rude Health Porridge oats
170g Flour
1tsp Baking powder
1 egg
1 pinch of salt
60g Chopped nuts

Method
  1. Dissolve sugar and margarine.
  2. Beat egg and add to mixture.
  3. Add all other ingredients and mix well.
  4. Spread into prepared 7" or 8" square tin.
  5. Bake for 45 minutes at 180 degrees Celsius
  6. Mark into 16 squares and allow to cool thoroughly before turning out.
