Katie's Peachy Pear Porridge

Ingredients (serves 3):

4/5 dried peaches

1 tablespoon organic Da Mhile single grain whisky

3/4 cup medium-ground oatmeal

1/4 cup course-ground oatmeal

a small handful of macadamia nuts

1 teaspoon apple powder

1/2 teaspoon cardamom powder

1 bay leaf per portion

1 pear, chopped

a dash of milk

 

Method:

1. Chop the dried peaches and soak them in the whisky.

2. Finely shave some of the macadamia nuts into the oatmeal.

3. Add the apple powder, cardamom powder and bay leaf. 

4. Soak the oatmeal mix in slightly warm water 1-1, stir, cover and leave to soak overnight.

The next day…

1. Stew the dried peaches with the pear and a small amount of water in a pan – about 5 to 8 minute.

2. Chop the rest of the macadamia nuts and lightly toast.

3. Once the stewed fruits are soft add the soaked oats to the pan.

4. Cook the porridge, stirring gently and adding recently boiled water to keep the consistency you want. This can take up to 5 minutes.

5. When ready remove the bay leaves.

6. Serve in a bowl with a dash of milk – cow or soya – and garnish with toasted macadamia pieces, the saved stewed fruits and a bay leaf per bowl.
