Rude Health Muesli and Banana Muffins

Makes 14 large muffins

Ingredients
400g plain flour
300g Rude Health Muesli
400g brown sugar
10g Bicarbonate of Soda
20g Baking Powder
3-4 ripe bananas, peeled and chopped
250ml vegetable oil
3 eggs
250ml milk

Method
  1. Pre heat oven to 180 degrees C
  2. Place all the dry ingredients and the chopped bananas in a large mixing bowl and mix.
  3. Whisk the eggs with the vegetable oil in a jug until mixed
  4. Add the egg and oil mixture to the dry ingredients with half of the milk and gently mix. You don’t want to fully mix the ingredients; you still want to see some flour in the mixture. You aren’t making a smooth cake mixture, more like a rough batter.
  5. The mixture wants to be at a dropping consistency, so add more milk if necessary.
  6. Line muffin tin with deep muffin cases and fill cases almost to the top. Place in the oven for 20-25 minutes until lightly browned.
  7. Place muffins on a cooling rack. They will keep in a tin for 4-5 days (if they last that long!)
